sweet eats: bacon wrapped dates

dates1 I feel almost guilty sharing this “recipe” since it is so simple, and really just assembly.  I made these bacon wrapped dates stuffed with goat cheese and almonds for a party we had at our apartment this past weekend.  They were a big hit and many people were asking me for the recipe.  All you need is a bag of pitted dates, a package of center cut bacon, a container of almonds, and goat cheese.  Just follow the steps laid out in the pictures below, and don’t worry, there are very few ways to mess up something wrapped in bacon.

dates 2 Step 1: Place the goat cheese in a ziploc bag and cut the tip to make a pipping bag.  Fill the dates with goat cheese using the pipping bag.

dates 3 Step 2: Add an almond to the center of the date.

dates 3 Step 3: Cut the bacon in thirds and roll the date in bacon so the edges overlap.  Push a toothpick through the date to secure.

dates 4 Step 4: Line a baking sheet with foil and top with a wire rack.  Line the dates along the wire rack so the grease will drip down and remain on the foil.  Bake at 400 degrees for 20 minutes or until the bacon is crisp.

dates 5 Serve warm & enjoy!
