sweet eats: go-to dinner

My boyfriend travels for work a lot during the week, but when he is home for dinner I usually try to cook up something tasty.  On most other nights I can be found standing in the kitchen eating a cold chicken cutlet with the fridge slightly ajar, but that’s a story for another time.  Working full time & having a blog can sometimes make weeknight cooking a challenge, so I love to have a simple go-to dinner thats perfect for any night of the week.  My salmon burgers are fast, healthy, and easy.  Just follow the recipe below and enjoy!

Step 1: Season the salmon with salt, pepper, and olive oil and bake the salmon at 400 degrees for 12-15 minutes.  Seed and chop one jalapeno, one red and one yellow pepper, and half a red onion.

Step 2: While the salmon is cooling, saute the vegetables in olive oil until soft, about 7 minutes.

Step 3: Flake the salmon into a bowl and mix in the vegetables.  Add 1 egg, and a few handfuls of breadcrumbs.  I just eyeball it but about a 1/2 a cup is usually good.  I also add 1 tspn of each, cumin, lemon zest, and paprika.

Step 4: Form the salmon mixture into patties.  This should make about 4 large patties.  Cook the patties in a pan until browned on both sides.  (About 3-4 minutes per side.)

Step 5: While the burgers are cooking, get together your extras.  I add sliced tomatos, sliced hot cherry peppers, and a greek yogurt dill sauce on top.

Step 6: Assemble your burgers and enjoy!  I served mine with a pickle and sweet potato fries…yum.
