On Friday night I made dinner for my boyfriend’s birthday and I wanted to share the recipes with you guys incase you have a man or a special occasion to cook for. For dinner I made these stuffed shells from Food and Wine magazine and they came out perfectly. They weren’t too hard and the marinara sauce was delicious! For dessert, I invented what I now call the maple-bacon cake. If you like pancakes and bacon, this cake is for you. I was nervous it was going to come out weird but my boyfriend and I both really liked it (and I usually don’t eat meat). You can find the recipe for the cake below. Maple Bacon Cake:
1 box white cake mix
1 lb bacon
1/3 cup reserved bacon drippings
1 and 1/4 cup water
cooked chopped bacon
2 tblspn maple extract
Mix the cake mix, water, eggs, bacon drippings, maple extract and half of the cooked chopped bacon in a bowl. Bake the cake according to box directions, using two 9inch round pans. While the cake is cooling, make the icing recipe below.
1 and 1/2 sticks butter
4 cups confectioners sugar
2tblspn maple extract
1tblspn cream or milk
Cream the butter until soft and fluffy. Slowly add the confectioners sugar and continue beating. Add the maple extract and the milk. Ice the cake once it is completely cooled and decorate it with the rest of the chopped cooked bacon.
This would be the perfect cake for a brunch or try making it into cupcakes! Enjoy!
